Best I can tell, having attachments from bundles/variant attachments causes the guns to disappear upon infil. Big issue if you're infilling with contraband player weapons and your own, as it will cause your own gun to disappear. I started the game with primary insured weapon (ISO Hemlock) in slot one, contraband SMG in slot 2. The game loaded with nothing usable for primary weapon : note, not even fists. I can switch to second weapon but what the video doesn't show is that it's also not possible to un-equip that second weapon back to fists/nothing.
