Uchigatana is a great weapon, stick with it and use the normal upgrade path and focus on Vitality, Endurance and Dexterity. I’ve beat up to o and s with it so I guess and normal upgrades. Uchi is one of the best weapons in the game, just get it to normal +15 with 40 Dex and it will be extremely good. Dual handing the hiltless with the adjudicator's shield on your back is my recommendation until you can get a +5 sharp uchigatana and a +5 tearing uchigatana. Single handing the hiltless or katana is also effective if you prefer a shield, as the moveset for katanas is very versatile, somewhat like lighter straight swords but with better reach.
