OneNote would be a good option. It has decent writing tools, infinite canvas while still having notes organised pretty well, and robust typing tools, especially in comparison to other note taking apps that support typing AND writing. I have my own personal gripes with it but it’s the one note taking app I’ve used consistently since high school.
