If I'm not mistaken, there are 12 Smelter Wedges in total (6 at the beginning, 4 in a chest, 1 with Fume Knight and the last one in the memory of Sir Alonne). You'll be fine even if you use all of your Smelter Wedges before fighting Fume Knight.

It may well be that they have some relation to the Smelter Demon, but it's difficult to say for sure.
